Moist & Delicious Gluten-Free Pumpkin Bread

This Pumpkin Bread is so moist, and delicious, you and your family will never miss the gluten!
  • 1.5 Cups Gluten-Free All Purpose Flour Blend
  • 1.5 Tsp. Baking Powder
  • 1.4 Tsp. Salt {Fine Ground, High Quality ~ Celtic Sea, Himalayan, or Real Salt.}
  • ¾ Tsp. Pumpkin Pie Spice Blend {Here's the home-made recipe I use.}
  • ½ Tsp. Cinnamon
  • ¾ Cups Coconut Sugar
  • 1.5 TBS Raw Cocoa Powder
  • ½ Cup + 2 TBSP. Applesauce {We use home-made from our Orchard.}
  • ½ Cup Canned Pumpkin {Not Pumpkin Pie Mix, JUST PUMPKIN.}
  • 1 Egg, Beaten
  • 1.5 Tsp. Vanilla Extract
  • ½ Tsp. Molasses
  • Plus ¼ Cup Raw Pumpkin Seeds {For Sprinkling on top of your bread before it goes into the oven.}
  1. Pre-heat your oven to 375.
  2. Generously grease a standard-sized bread pan.*
  3. Add all dry ingredients into a large mixing bowl.
  4. Thoroughly whisk dry ingredients together.
  5. Form a well in the center of dry ingredients.
  6. Add all wet ingredients into the center of the well.
  7. Blend with an electric mixer for a few minutes.
  8. Start on low, increasing to medium once all ingredients are damp. Gradually increase up to high, as the batter becomes incorporated. Mix for a minute or two on high. Continue as long as it takes for the batter to become light, smooth, and well blended.
  9. Pour mix into your well-greased bread pan.
  10. Use a wet, flexible spatula to get every last bit of your batter into the pan. {I like to leave a teeny bit in the mixing bowl for my darling girl to "lick the bowl", like I did as a kid when my own mamma was baking!}
  11. Wet your hands and with wet fingers smooth out the batter on top. {This is an amazing baker's trick that I just learned this year and I use with every batter I make! If you haven't tried it yet, you'll love it!}
  12. Scatter Raw Pumpkin Seeds on top of your batter.
  13. Bake on the middle oven rack for 1 hour**, OR until a toothpick comes out clean.
